These balls of white powder are shortbread-like cookies that make Christmas time, in my house, extra special. You need a little sparkle of glittering snow on your Christmas table, making eyes wide with awe and excitement!
Do you struggle with that – with food and fellowship? Sometimes, okay a lot of the time, I struggle with it. Even though I am constantly thinking about food and how to make it healthy and what I can make next and who I can make it for, I struggle with ‘do I really need it or should I be thinking about it?’ I love making something for someone and I love the fellowship but then I struggle with it, too. Even though I long for that special fellowship with friends and family – sharing food, wine and God together, where we can just sit and talk for hours. I want to provide that for others, but I don’t feel like I am worthy of it or something…….UGGGGHHHH….
Do you ever just feel rejected from everything? It might be from people around you, whether that be family, friends or someone you just met….maybe you feel rejected by your body and all the regimens and ‘right things’ you keep trying to do to feel better and heal! It’s like whatever you say, think, feel, do, dream, try doesn’t feel good enough! Let me tell you right here and now, “God is always at work. He is a present, loving Father, aware of our deepest hurts and our even deeper needs”*. I’m telling myself this, too, trust me, because I’m struggling with ALL of the above right now! Mmmm…don’t you love the smell, feel and taste of a warm soft piece of bread? Whether it’s a roll you break open or a loaf you cut into, watching the steam and smell the heavenly aromas come out, you can’t beat it! Mm mm…
Do you have someone who you can go to in person, read or listen to for inspiration, insight and Godly advice? As I just wrote that sentence, I realized that I, fortunately, have all three of those. When I was just thinking of only one person, who actually inspired me to make this yummy Fresh Orange Glazed Sugar-Free Chia Cake. Haha wow, maybe that’s God’s way of shining His light on me, telling me ‘I got you!’ Thank goodness!
I am lucky enough to have a great mom who I know I can go to at anytime and will just pour herself into me, loving me with a mom love but also with Godly wisdom and advice. Lovingly being my guinea pig and encouraging me along the way as I am learning to be free and do what I love to do….bake! Which brings me to the person who I love getting lost in her thoughts as I read one of her books, like Bread and Wine or Cold Tangerines, and most recently her daily devotional book Savor. Her books are definitely ones you will want to share with friends! Shauna Niequist has touched my heart in so many ways and is someone who I hope to be like- with writing, baking and helping others.
As I was reading through Savor I came across her recipe for a Poppy Seed Cake that looked really good and simple. So I thought, hmmm, I want to make that, but do what Summer does- do my healthy twist on it. Turning it into a gluten-free, refined sugar free, dairy free and egg free cake with a fresh orange glaze from oranges that I picked from my very own tree, which became my Fresh Orange Glazed Sugar-Free Chia Cake.
