Oat Baby Chocolate Chip Cookies are a great afternoon snack or late night treat for mom’s-to-be, new mom’s and those of us who just love chocolate chip cookies (ahem, that would be me!)  I am a huge cookie lover (read my post Heart Healthy Oatmeal Cookies), especially ones with the cute yummy chocolate sparkles poking through.   Costco has great chocolate chip cookies that are just to die for! If you haven’t tried them yet, and your tummy will allow you to, you must!  I keep trying to create a good recipe to mimic those, but nothing can beat them! The challenge, also, is making good ones that are ‘healthy’ and ‘healing’ for my stomach, but also tasty to share with others around the table.  These are both tasty and healthy for not only me (even though it does have grains in them), but also for those sweet new momma’s out there! Heart Healthy Oatmeal Cookies

Even though I love baking all sorts of things, I think cookies are probably my favorite.  These Oatmeal cookies are loaded with heart healthy oats and iron rich raisins, so you can feel good about eating them!  They are great as a snack with milk, dessert with ice cream (or milk again), or for breakfast!  Breakfast?  What?  Yeah!  I mean, think about it, what do you put in your oatmeal?  Basically everything that is in these yummy oatmeal cookies:)  

I remember spending the night at my grandmother’s house (the one with the blessed pie crust) and her making me oatmeal for breakfast.  You know what she put in it to make it extra yummy?  Butter, brown sugar and dried fruit…..Mmmmmm……it was so creamy and sweet and healthy!!!  So, don’t feel bad about eating one or two cookies for breakfast, especially when you’re running out the door.  Or just want something quick with your nice warm cup of coffee.
