Snowballs

It’s snowing!  Okay, maybe it’s not literally snowing in the hot Christmas South, but we can make it snow with these buttery melt-in-your mouth winter white Snowballs!

These balls of white powder are shortbread-like cookies that make Christmas time, in my house, extra special.  You need a little sparkle of glittering snow on your Christmas table, making eyes wide with awe and excitement!

Snowballs

Snowballs

I’m warning you, they are messy, but so worth it!  If you make them small enough you can just pop them in your mouth without getting the powdered sugar everywhere, but that’s just hopeful thinking.  These cookies are made to make a little snow dusting.  You can keep popping them in your mouth, though, enjoying every bite of their buttery sweet texture that will just melt in your mouth.  If you don’t usually moan with an excited yumminess moan when you take a bite of something, you will when you take your first bite of these Snowballs.  I should call these Excited Moaning Snowballs because every time I make them, it seems like everyone just moans and does that ‘oh this is so good’ eye roll, especially my family members.  It’s kind of quite humorous:)
Come on over and get ready for a snowball fight as we mix and roll and get powdery white with this Christmas favorite and let Summie’s Yummies Sweet (and Snowy) Deliveries bring merriment and joy to your Christmas celebrations!:)  Merry Christmas!!!

Fresh Orange Glazed Sugar-Free Chia Cake

Do you have someone who you can go to in person, read or listen to for inspiration, insight and Godly advice?  As I just wrote that sentence, I realized that I, fortunately, have all three of those.   When I was just thinking of only one person, who actually inspired me to make this yummy Fresh Orange Glazed Sugar-Free Chia Cake.  Haha wow, maybe that’s God’s way of shining His light on me, telling me ‘I got you!’  Thank goodness!

I am lucky enough to have a great mom who I know I can go to at anytime and will just pour herself into me, loving me with a mom love but also with Godly wisdom and advice.  Lovingly being my guinea pig and encouraging me along the way as I am learning to be free and do what I love to do….bake!  Which brings me to the person who I love getting lost in her thoughts as I read one of her books, like Bread and Wine or Cold Tangerines, and most recently her daily devotional book Savor Her books are definitely ones you will want to share with friends!  Shauna Niequist has touched my heart in so many ways and is someone who I hope to be like- with writing, baking and helping others.

Fresh Orange Glazed Sugar-Free Chia Cake

As I was reading through Savor I came across her recipe for a Poppy Seed Cake that looked really good and simple.  So I thought, hmmm, I want to make that, but do what Summer does- do my healthy twist on it.  Turning it into a gluten-free, refined sugar free, dairy free and egg free cake with a fresh orange glaze from oranges that I picked from my very own tree, which became my Fresh Orange Glazed Sugar-Free Chia Cake.

So come on over and let’s enjoy some time around the table as we savor this Fresh Orange Glazed Sugar-Free Chia Cake.  We might turn on some Carrie Underwood songs from her Greatest Hits CD, because she inspires me, too, with a lot of her songs.  So many have so much meaning and her powerful voice makes the song come alive, bringing me chills!  Right now, as I am listening to the Country Countdown, she is on singing her hit ‘Something in the Water’.  Oh, it gives me chills.  So hurry up, come on over and let’s just bake.  ‘I once was lost but now I’m found, was blind but now I see!’ Continue reading →
