Marble Wrapped Christmas Cake
Gluten Free, Reduced Sugar
1 cup Organic Butter, softened
2 cups Organic Cane Sugar
6 Organic Eggs, room temperature
3 cups King Arthur Flour Gluten Free All-Purpose Baking Mix
2 tsp. Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Himalayan Sea Salt
3/4 cup Organic Milk
2 teaspoon Vanilla Extract
1 Tablespoon Unsweetened Cocoa Powder
1 Tablespoon Red Food Coloring
1 cup Organic Powdered Sugar
2 teaspoon Organic Milk
Christmas can bring such wonderful memories. Christmas also brings the tacky re-gifted Christmas present – fruitcake but not Grandmother’s Gluten-Free Fruitcake. Some people don’t like fruitcake, cringing at the thought of getting it and just pass it along as joke to next person. That’s understandable because the store bought fruitcakes are loaded with all sorts of flavorings and liqueurs and sugars and who knows what else. BUT, I have a recipe that will change your mind about fruitcake forever! You’ll never one to re-gift this one because you’ll want to have and it and savor it all for yourself! This fruitcake is passed on from my Grandmother, who always made it year after year and lovingly taught me how to make it, passing on the much anticipated fruitcake family tradition on to me. That day so many years ago, when I first made this fruitcake with my Grandmother created such fun memories that I now look back on and am so thankful of that time I was able to spend with her, bake with her and laugh with her bringing in the Christmas celebrations.
My Grandmother’s Gluten-Free Fruitcake is one you are going to love sharing with others (if you can part with it yourself), with friends and family alike. Start off the Christmas season with these yummy Paleo Ginger Cookies. They are so good with a little sugar and spice to start your holiday season merry and bright! The best part about these cookies is that you think you’re really indulging, which you are, but they’re made from gluten free and grain free flours, and they are refined sugar free!! Okay, they are rolled in organic cane sugar to make them pretty and sparkly, but other than that, sugar free!! Whoa!! So, put on some Christmas music, grab a cup of hot cocoa and let’s make some Paleo Ginger Cookies!!!
Aren’t Thanksgiving leftovers just the greatest? Sometimes, that’s the best part, warming up the turkey and casseroles the next day or later that night – making a yummy sandwich and eating off of paper plates. But then, you get tired of the sandwiches and scooping up that last bit of casserole, but still have a ton of turkey left! What do you do so it doesn’t go to waist? Turn that turkey into a yummy spicy ‘Leftover Turkey Tortilla Soup’.
